When you realize you need more nutrition than Graeter's in your life...

Kentucky's weather has been a balmy 90 some degrees for the past...well....I can't even remember how long.  It's been miserable...and I don't know if you're like me, but on these hot days there isn't much that sounds appetizing.  I mean ice cream has been my "go to" - darn you Graeter's and your Strawberry Chip for being the best ice cream in the world.  But right in the middle of swimsuit season I can't eat a pint of ice cream every night (although I'm trying).  I've been researching new ideas, healthy, light, and yummy.  I wanted to share this quick little appetizer with you that I found on Pinterest - from this blog - Cookin' Canuck.



So this Healthy Mediterranean 7 Layer Dip - made my day!  I made a few changes to the original recipe - which I think is totally fine! :)  Well actually it has to be, because I left the grocery without the red pepper, and I love olives, so I gave them their own layer.
